It's a great frugal meal that Koreans enjoyed especially during the cold season. BTW, if you cannot get pork neck bones, you can just use pork ribs and it will still be delicious.

Instant Pot Gamjatang recipe was a perfect recipe to try because it requires cooking the pork bones for a long time. Loaded with flavors, this hearty stew recipe is simple and easy to make in the IP. When compared with my traditional recipe, this recipe was just as yummy if not better.

Instant Pot Gamjatang (감자탕) Korean Pork Bone Stew has been on my list to 'cook for blog' for a while now (probably too long.. haha). When I first got my Instant Pot back in June, I immediately thought that Galbijjim and the Instant Pot Gamjatang recipe was something that would be perfect Korean food to be made in this amazing appliance.

So, this time I actually cooked both regular and IP recipe at the same time. And I can tell you with total confidence that the Instant Pot Gamjatang came out just as flavorful as the regular recipe and definitely was simpler and quicker to make.

Or...you have made it all your life and have perfected making Al Tang with no recipe. Another one of my husband's favorite stew, he actually requests this spicy pollock roe stew every now and then. And in the past, I have made it but was never 100% satisfied with the outcome. Because you see..I did not grow up with this dish and was not part of our family's regular menu.

The History of Budae Jjigae

After the Korean war, the US military stayed behind and setup bases in several locations throughout Korea. Usually near these bases,  one could buy American products -especially canned foods like, yes, the infamous SPAM!!

So what to do with SPAM?  Well..what else? Add Kimchi!! Kimchi makes everything taste better!! And so this Kimchi Army Stew (aka 부대찌게 - pronounced Boo-Dae Jjigae) was born.

The word Budae means Army Base in Korean and by now you know Jjigae means stew. That's why it is translated as Korean Army Stew or Korean Army Base Stew. This dish is still very popular today and most Koreans say the area for the best Budae Jjigae is actually 의정부 (Uijeongbu) -the place of origin.

One memory I have about SPAM and other American goodies is that even when I was a kid (in the late 60's early 70's, many years after the war) this one lady (ajoomas) came  to our house and secretly sold various foods that were basically smuggled out of the army bases.

I remember getting excited every time this 양키 아줌마 (Yankee Ajooma - haha.. get it? ) would visit, to see what yummy goodies came out of her bag! Because, at that time, things like peanut butter, grape jelly, SPAM, American Kraft Cheese singles, corn beef, baked beans and chocolates were not available anywhere else but only through her.

Right, I know that was a lot to digest. What?? You can make 3 dishes from 1 recipe? And you can  freeze it?

Basically, it means you make this 1 recipe with kimchi and pork, freeze them and then you can make 3 or even more recipes with kimchi using the frozen kimchi and pork mix.  It's also great for singles because you can divide the amount into even smaller portions when you freeze them.

How awesome is that?! One Kimchi Pork Recipe to rule them all! 💍💍 LOTR joke..HAHAHA....

This recipe with kimchi and pork is also so easy to make too. Before I go on,  I have to thank my awesome sister #3 for this idea. With her busy work schedule, she is always looking for ways to prep her meals ahead of time so that when needed, she or anyone in her family could cook these dishes in just a few minutes with minimal effort. I don't always think of these things as much because I am in the kitchen all day anyway. 😝 Kind of goes with this blogging work...But for her, she often has to come home after a long day of work or be away from home for days on travel. So she wanted to make something where it would be easy for anyone in the family to cook whenever they wanted to. She told me that before this, she used to make ahead lot of Korean soups and stews and freeze them so that anyone could just heat it up. Which is also a great tip.

Alaska Pollock Stew or Dongtae Jjigae is a very popular Korean fish stew that is made with frozen Alaska pollock. I have shared in my Bugeo Gui recipe about how Koreans use different words to describe Alaska pollock in different states - fresh, frozen, dried, semi-dried.. Alaskan pollock is such an important ingredient in Korean cuisine that there are unique names (6 in all!) for all the different ways the fish comes in. Dongtae 동태 (frozen), Bugeo 북어 (dried), and so on - see my post on Bugeo for more.

As you may have guessed, the 'dong' in Dongtae (동태 凍太) means 'frozen'. And I don't know why this phrase suddenly comes to my head but Koreans talk about someone's eyes looking like 'frozen pollock eyes' = '동태눈'...hahaha...
