Instant Pot Short Ribs (Galbi Jjim) recipe is here!! YAY!! Which means...YES - I got my Instant Pot!!!

Actually, I got it almost a month ago...😉 but I was so busy with travel and consulting for a new restaurant opening, the instant pot sat sadly on my counter all this time...in case you don't know what Instant Pot is - it is a slow cooker + pressure cooker + rice cooker all rolled into one. When I think of Bossam, I think of Kimjang because it was traditionally eaten around Kimjang (in the fall, Koreans make kimchi to last through winter) time when I was growing up. After a long day of pickling cabbages, chopping and making the kimchi stuffing, with your whole body smelling of Kimchi, everyone deserves a good dinner.😉

And Bossam was what moms made to feed the helpers who worked hard all day. It was such a wonderful way to end the day.

Once pork was cooked, all we needed was some leftover pickled cabbages and kimchi stuffing. OH MY.. ...sooo amazing... all the different textures of crunchy and chewy, and the explosion of garlicky and spicy goodness of the kimchi stuffing in between the fatty pork..and a hint of sweetness somewhere... it was SIMPLY HEAVEN in every bite.

Spicy Soy Pork Ribs with Shishito Peppers or simply Dwaeji Galbi Jjim 돼지갈비찜 in Korean. Ready in 30 minutes in your Instant Pot!

Spicy Soy Pork Ribs with Shishito Peppers or Dwaeji Galbi Jjim is the latest recipe that I developed for the Instant Pot.  I use a lot of shishito peppers because our family really LOVE these peppers (especially my daughter) and they are in full season right now.

In Korean, we call Shishito Peppers, Kkwari Gochu 꽈리고추. The flavor of this pepper is very mild with almost no heat and yet there's still that hint of lovely peppery spiciness with a slight sweetness that makes these peppers so addicting. The skin is also thinner and more tender. I have recently just stir fried it with a little bit of oil and some of my apple lemon soy sauce and it came out really delicious.

Back in 2011, I posted Spicy Soy Braised Pork Ribs with chili peppers and called it Spicy Soy Braised Pork Ribs or Dwaeji Galbi Jorim because that's what we called it in our family. Many Koreans use the words Jorim 조림 and Jjim 찜 without a lot of distinction and I am certainly guilty of that (as in my post in 2011). However, I feel I need to make a little correction before we go further. Let's look at the difference in more detail.
