So sorry for the late response. First, FYI, I do have the full authentic version (https://kimchimari.com/japchae/) where spinach is added. This one is a simplified version. 🙂 Shiitakes should sit in the marinade for at least 10 min or so but longer is fine. Enjoy!

I am so glad to hear that enjoyed it! Wood ear mushrooms have such a great texture, doesn’t it? I love them..and they are pretty neutral in flavor so you can add it to any dish to add extra texture. With the exception of using Mung Bean Saifun noodles (hand on hand) which I cut in half after soaking, I made the recipe exactly as stated. Really amazed at how much liquid the Shitake mushrooms absorbed. The recipe has wonderful flavors, I had never used or heard of wood ear mushrooms before, I bought them fresh from a nearby international food market, these mushrooms added a texture to the dish that was surprisingly robust. I really appreciated the cleaning tip since I was completely unfamiliar with this type of mushroom. My husband & I loved this dish! Will make again w/the proper noodles next time. Thank you for sharing!
