So sorry to hear that you are allergic to soy! Yes, you can use coconut aminos instead of soy sauce – it just isn’t as yummy but it works ok most of the time. Maybe you can add a bit of fish sauce sometimes if you feel like soy sauce lacks flavor. Especially when the recipe has Guk Ganjang (Soup Soy Sauce) in it. Cheers!

My mom passed away more than 10 years ago. I did “learn” by watching and learn”
as my mom used to say. I did but, not really until I tried to recall every thing she made, and how when I married and went to Germany. It was trial and error. 🙂 I now have 3 kids of my own. All grown, but only one likes to “learn”. While the other ones just like to eat! Anyway, I do enjoy your blog and look forward to l “learning” more. Thank you.

Hi Oliver – for Vegan kimchi, the authentic sauce to use is Guk Ganjang (Korean Soy Sauce for Soups). It has the combined flavors of fish sauce and soy sauce which makes the kimchi delicious. Perhaps you can find an online store where they will ship it to you. Good Guk Ganjang is very important for Korean cooking. Brand wise, Sempio, CJ are all good brands to buy. good luck!

Sadly I live in the UK, so the product references are a bit different. However, the reason I’m actually writing is to ask you what sort of soy would be best to use for making kimchi. At the moment I’ve found a really amazing aged white soy that I’ve been using that’s made in Taiwan, and I’ve also used a few different other brands. My kimchi needs to be vegan so I want to make sure the soy sauce I use is really good and complex. The white soy is great but not only is it very expensive, I wondered if there might be a more authentic alternative I could use, and also whether you felt it was problematic to be making kimchi (to sell) with a non-korean sauce.

How to cook, why certain foods, what they are good for, SUPERIOR FLAVOR etc etc. I’m hooked on Korean NETFLIX romance dramas, and certainly notice no matter what the genre, all Koreans are hooked on FOOD. Me too. Even single & 75, having started @22 with macrobiotic, then back to American and European and Lebanese and whatever, Korean is THE BEST. Not to mention YOU are delightful.

Tamari should work for most recipes that use just regular soy sauce (Jin Ganjang) but it cannot substitute Guk Ganjang (Soup soy sauce). Tamari is actually not a Korean soy sauce so I’m not fully knowledgeable in that so I can’t say what methods they use to make it. So happy that you are enjoying my site – and what you definitely have going for you is that you certainly know the flavors so you will know how everything is supposed to taste which is a big advantage from the start -so enjoy and happy cooking!
