I kind of recommend having it thaw but you can cook it from frozen if you’d like. Try cooking it for about twice as long if you are starting from frozen. Good luck!

If the cornish hen is frozen, do you recommend having it thaw completely and following the recipe as-is or can I put it in frozen and just cook in the Instant Pot for longer?

Hi Heather, I have cooked this recipe many times but I never had undercooked chicken. I wonder.. did you perhaps use a full regular chicken? This recipe was for a cornish hen which is not much more than 1 lb compared to regular chickens being much larger. If the chicken is more than 1 lb, then you definitely need to increase the cook time. Or did you perhaps use a frozen chicken?

Delicious and easy, but be careful you cook the chicken to a safe temperature. I let mine naturally release for 17 minutes, then stuck a meat thermometer in, and it was undercooked.

There is a separate kind of garlic that has just one single clove – aka Solo Garlic (https://en.wikipedia.org/wiki/Solo_garlic). You can also just use regular black garlic. I mean 3 in addition to regular garlic. Sorry I wasn’t very clear. Thank you so much for asking!
