The bean part will definitely be still a little crunchy. The sprout part will be soft and tender with a hint of crunch. I like things less soft so if you want it to be softer you could cook a little longer. Enjoy!

You should remove beans that didn’t sprout – it’s probably spoiled. But if they look solid and not rotten, you could use them I guess. But I would remove it.
