Hi Christine, wow.. I am so very happy to hear that my recipe comes at least somewhat close to your mother’s Oi Muchim.. I’m sure if you experiment a little more you can make it even closer to hers. I just made a batch of Oi Muchim 오이무침, following your recipe. Two things I love about this recipe: 1. It’s a small batch recipe. I grow a very small vegetable garden, I mean, one plant of this, one of that. Thus, I had only two lovely cucumbers to prepare, with hardly any small-batch options which might suit. 2. I am a couple of years shy of 70, imagine that! Of 100% Korean descent, but born and raised in the US, there were no Korean neighbors or family around where I grew up. My mom used to make a simple cucumber side dish which still lingers in my memory. I would watch her make the dish, and as a young adult, I used to be able to come close to it. After so many years, I simply could not remember exactly how to make a dish that matched my mom’s. She was a fabulous cook, as was her own mother. Your recipe is the closest I have come to replicating the dish I remember. I only wish Mom was still around. In her elderly years, she so enjoyed a good Korean meal. I think she would have savored the seasoning of your Oi Muchim recipe. Just wanted to share how much I enjoy your recipe. Thank you.

I’ve only recently discovered your website, but already you’re taking my Korean cooking to new heights. My husband, son and I each put just one drop of perilla seed oil into our soup last night. The smell alone was exciting. We learned about the oil on your site, of course. I’d made teuakk juk a few times, but your insta-pot recipe has by far been our favorite. I’ve always loved cooking, from the age of 2 making pancakes with my grandfather. I’m the mom to greatest little 11 year old Korean-American foodie (he can put a Chopped judge to shame). It was obvious from the very first document I received from the Korean adoption agency when he was 18 months that food was important to my little guy and right away I set out to find out more about those anchovies he was eating.

My daughter is gluten sensitive, but it’s very hard to keep her away from gluten, in UK. I had to change my cooking style from European to Asian, which is so much more friendly with the human body, plus the food tastes amazing 🙂

I am a Korean adoptee and my mother fed me like a White farm kid, all gluten and dairy. Now in my 30’s, I have gut issues, poor digestion, and used to have skin problems until cutting gluten/dairy. All of the US gf/df recipes are bland, or just 2 tastes (too salty/sweet), like most American food. Or all raw food, which is bad for digestion, according to Tibetan medicine. I have been seeing a Tibetan doctor and taking traditional Tibetan herbal pills too. I love how Korean food combines all tastes, and it’s fun to arrange my own meals w/different banchan this way. Your blog has been helping me recover my health in a delicious way! Can you please write more posts about holistic Korean herbal/food remedies, especially for digestion? I’m sure many other Asian-Americans who read this blog will appreciate it. It’s tough bc we do not have Western bodies, but are living in countries where food/medicine etc. is not designed for us. Thanks again.
