Mul Naengmyeon is a Korean cold noodle soup that's usually served icy cold (almost as a slushy) in the summer in Korea. But did you know that originally it was eaten in the winter time in North Korea (where my parents are originally from)?? Mul Naengmyeon has a special place in my heart because it was something our whole family loved and had quite often.

It was always our regular Sunday lunch menu after we came home from church. And my mom loves it sooo much that she always says she has a separate (extra) stomach for it.. HAHAHA... and so she can eat double her usual amount when it comes to having Mul Naengmyeon!! 😲😲My Dad always loved a true Northern style Naengmyeon very much too... 😍So.. as you can imagine, I grew up eating many variations of Naengmyeon in our home, at my grandparent's homes, at our aunts' homes, at different restaurants.. you name it, I've had it all.

So, I guess you could say I'm sort of a snob when it comes to this Korean cold noodle soup dish. And somehow it seems many restaurants just can't seem to get it done properly. There's a restaurant in our area that is sort of famous for their naengmyeon (WHY it's famous, I will NEVER know..) and people stand in a loong line to eat it. I went their 2 times (just to make sure I give them enough opportunities) and the second time it was soo bad, I could not finish the bowl. It was just really SOooo sweet and had no other flavor than sour and sweet...

What is Kalguksu 칼국수?

Kalguksu literally means 'knife noodles' but in general it refers to hot noodle soup made with wheat flour noodles that were handmade and cut with a knife. Records go back all the way to the Goryeo era and at which time wheat was very expensive.

Not much is needed to make these noodles - just your hands, muscle power, a rolling pin and a knife. Although making your own fresh noodles is a bit of extra work, it's well worth the effort - you can get chewier, lighter and thinner noodles.

When we were grad students in Florida in the early 90's, there was no way to buy fresh noodles from the Korean market as you can now. So we made our own almost every weekend during cooler weather. And this was one cooking activity my husband loved to help.

BTW, my husband helped me again with the kneading and the dough for this post. He wants to make sure I let you all know that he helped. You know him by now.. he loves to be in the spotlight - unlike me...hahaha. Back then, he really didn't want to help with cooking very much. But our deal was that if he made the noodles (because making the dough was too hard on my arms 😝), I was willing to make Kalguksu.

He would always say - "Oh, yes, I am good with things that need muscle power!"💪🏻💪🏻

Between you and me, it really doesn't need that much power... 😉😜sssh... but I let him believe it.. lol.

It's yummy chewy noodles in a Jjajang sauce that has a hint of spicy udon flavor. This dish appears in the movie Parasite and if you love Jjajangmyeon then you will love this combination.

Jjapaguri or Ram-Don is not something that grew up with. I heard about it a few years ago and basically it's a genius combination of Jjajangmyeon (Chapagetti 짜빠게티) and Spicy Udon (Neoguri 너구리) with no broth but still all the yummy spiciness of the udon broth.

Personally, I cannot eat much of these instant noodles due to my gluten sensitivity but Chapagetti was one of my favorite instant noodles as a kid and is still my daughter's favorite to this day. I always have to make sure I have a few when she comes home to visit.

I've posted a quick recipe of this many years ago in my 3 easy ramen recipes post but I felt it deserved a separate post - partly due to the latest craze of the Korean movie Parasite and how this dish appears in the movie but mainly because I wanted to share some improvements I made to the recipe.
