It's a great frugal meal that Koreans enjoyed especially during the cold season. BTW, if you cannot get pork neck bones, you can just use pork ribs and it will still be delicious.

Instant Pot Gamjatang recipe was a perfect recipe to try because it requires cooking the pork bones for a long time. Loaded with flavors, this hearty stew recipe is simple and easy to make in the IP. When compared with my traditional recipe, this recipe was just as yummy if not better.

Instant Pot Gamjatang (감자탕) Korean Pork Bone Stew has been on my list to 'cook for blog' for a while now (probably too long.. haha). When I first got my Instant Pot back in June, I immediately thought that Galbijjim and the Instant Pot Gamjatang recipe was something that would be perfect Korean food to be made in this amazing appliance.

So, this time I actually cooked both regular and IP recipe at the same time. And I can tell you with total confidence that the Instant Pot Gamjatang came out just as flavorful as the regular recipe and definitely was simpler and quicker to make.

Dakjuk (닭죽 Chicken Porridge) always reminds me of my dad. It is one of those dishes that brings up the most joyful memories of childhood. On summer weekends when I was little, our family had a very private place on our dad's farm (read more about it HERE). Amongst beautiful and majestic pine trees, there was this hidden creek ... where the water was crystal clear and icy cold ❄️.

And my father built a little dam to create a little pool for us to play in and also a wondumak 원두막 (a hut with open sides) that was built on this concrete bridge suspended over the creek. We took naps in the hut and had the most fantastic meals. My father also built a traditional Korean wood-burning clay stove (아궁이 Agungi) where he made the most amazing foods. I wish I had a picture but I don't...

Our meals weren't fantastic because the food was a Michelin star-worthy but because it was really yummy food that my father cooked with much LOVE ❤️for his family. Also, because it made me sooo happy to see him soo happy. I'm sure you know what I mean.. remember how joyous you felt when you saw your parents being so happy with something??

The fun story behind this Dakjuk is that I had to ask my mother and older sisters about how to make my father's dakjuk and each person only remembered parts of the dish but no one person had the whole recipe. So I pieced together all the different parts and came up with this recipe my cooking experience and flavor memory (yes, I can still remember how the dish tastes from 40 some years ago).

I wasn't sure if I could do it but boy, I did it!!! I have been wanting to re-create the flavors for some time now and this time I was determined to get it right. You may say, hey, chicken porridge is chicken porridge - just chicken broth and rice, right? Noo... Please believe me when I say this one is special..

I have been making Baeksuk (Korean chicken soup) in the pressure cooker (instant pot) for some time now but I just have never gotten around to taking pictures and fine-tuning it for a recipe so I am soo excited that I am finally able to share it with you! 😍👍

BTW, if you don't have a pressure cooker, here's a regular Baeksuk recipe,- ready in 40 minutes. I have made this recipe for almost 30 years!

Sooo.. before we get to the recipe, just we are clear.. let's just clarify a few things... ;) As far as I know, this is how each are different.

This Instant Pot Yukgaejang recipe was requested to me by my daughter during my recent Thanksgiving visit to the east coast. Oh, and yes, I hope everyone had a great Thanksgiving!!

I had a lovely time visiting her and took a nice break from working. She is having a wonderful time in grad school and has grown up to be a loving, kind and confident young woman. Anchovy broth (stock) or Myeolchi Yuksu (멸치육수) is a very simple fish broth that adds a very clean and mild umami flavor to many Korean soup or stews. It may almost taste like nothing when you taste it by itself but it adds such a great depth of flavor to your dishes. Knowing how to make this broth was such a life changer for me as a newlywed cook because often times I didn't have time to make the richer beef broth for soups and stews - which usually takes hours.

As you can see simply from the colors, the differences in flavor between the 4 broths is that broth flavor gets more complex and strong as the color goes dark (from left to right). The number of ingredients added also increases with darker colors. Now you may wonder, why not just make and use the stronger tasting broth for everything??

Well.. you can but I'm sure you heard of the term 'less is more '... and I'm a firm believer that the same concept applies to cooking too. And because broth #4 has shrimps and shitake, they may add some unwanted flavor for some dishes. But you are welcome to try it and see how you like it.
