Tofu Salad with iceberg lettuce, sweet corn and radish sprouts is the most delicious way to enjoy cold tofu. My sweet tangy and mustardy soy dressing works so well with the crunchy lettuce, corn and radish sprouts - flavoring the tofu in the most yummy way.

Now, you may say.. what tofu salad? Can this be really good?? Tofu is kind of boring as it is and salad can also be boring...so how can the combination of 2 boring things turn out delicious? But you have to trust me when I say this is just really wonderful. So where did the idea for this salad come from? About 15 or so years ago, I was inspired to make this recipe after a tofu salad dish that we always enjoyed having at our local Tofu House restaurant.

So, would you believe that this tofu salad recipe is actually one of the first recipe that I created on my own? Way back when, before I ever imagined of becoming a Korean food blogger, I signed up to create a cookbook for our Korean church as a fundraiser for missions. Because there were so many good Korean mom cooks in the church and then there were also many young Korean Americans who wanted to learn how to cook these dishes themselves, a cookbook was a perfect way for the older moms to share their knowhow and recipes with the young singles or married couples. I sought out several good cooks and then asked them for recipes. Some ladies readily wrote their recipes and gave them to me. Some ladies, I basically had to chase them down and press them to verbally tell me the recipe and then I tried to write them down. I wrote the cookbook in both Korean and English which also took more effort. In the end it was a LOT of work but it was great fun. And I heard that some still use the cookbooks even to this day.

What Tofu works best for Tofu Salad?

As I shared before in my Tofu with Broccoli post, there are 3 kinds of tofu - silken soft (sundubu 순두부), soft (for stews) and firm or extra firm (for frying). Read that post for more info but it can be very much a personal preference but I find that for this particular tofu salad, firm or extra firm works best

Right, I know that was a lot to digest. What?? You can make 3 dishes from 1 recipe? And you can  freeze it?

Basically, it means you make this 1 recipe with kimchi and pork, freeze them and then you can make 3 or even more recipes with kimchi using the frozen kimchi and pork mix.  It's also great for singles because you can divide the amount into even smaller portions when you freeze them.

How awesome is that?! One Kimchi Pork Recipe to rule them all! 💍💍 LOTR joke..HAHAHA....

This recipe with kimchi and pork is also so easy to make too. Before I go on,  I have to thank my awesome sister #3 for this idea. With her busy work schedule, she is always looking for ways to prep her meals ahead of time so that when needed, she or anyone in her family could cook these dishes in just a few minutes with minimal effort. I don't always think of these things as much because I am in the kitchen all day anyway. 😝 Kind of goes with this blogging work...But for her, she often has to come home after a long day of work or be away from home for days on travel. So she wanted to make something where it would be easy for anyone in the family to cook whenever they wanted to. She told me that before this, she used to make ahead lot of Korean soups and stews and freeze them so that anyone could just heat it up. Which is also a great tip.

And they all go great with any Korean meal!!

And individually each dish only takes 5 to 10 minutes. 

I am sure you have days where you just run out of time or just don't feel like cooking another side dish. For example, I will cook Yukgyejang and pan fried fish jeon but I just don't have the time or the energy left to make another side dish... but the table looks so empty... 😭 And this is when I go for one or more of these 3 quick Korean side dishes of mushrooms, avocado and tofu!!

Honestly, these Korean side dishes are soooo EASY, SIMPLE and QUICK to make that I am almost worried that someone may say - "What??  And you call that a recipe???" Please don't say that if you think that. 😁 I am a very sensitive person... 😅  HAHAHA. But then I also thought that it may just be the case that many of you never had these dishes. If you see it, you will wonder why you never thought of it!! Anyway,  hopefully you will enjoy them.
