Pressure Cooker Jangjorim (Soy Braised Beef) with Eggs https://kimchimari.com/pressure-cooker-jangjorim/ https://kimchimari.com/pressure-cooker-jangjorim/#comments Thu, 06 Oct 2022 17:31:05 +0000 https://kimchimari.com/?p=15942 jangjorim braised beef in instant potThis Pressure Cooker Jangjorim is an adapted recipe of my classic Korean soy-braised beef side dish that's delicious warm or cold and perfect for dosirak (lunchboxes). This recipe is so simple yet just as tasty as the regular recipe.

[caption id="attachment_15970" align="aligncenter" width="683"]pressure cooker jangjorim plated with sliced egg and meat on green mat Pressure Cooker Jangjorim (Korean Soy Braised Beef)[/caption]

Jangjorim has always been my favorite side dish in my lunchboxes as a kid in Korea but now, in this time of SIP, this pressure cooker Jangjorim has become a staple menu item. Having to come up with menu ideas every day, this salty, sweet and savory beef banchan has been a lifesaver for me and my family.

We often make rice bowls with it - with some egg and sometimes even butter added on top! YUM!! It's great for breakfast or lunch when you really don't want to cook something. You can also make bibim noodles with it - just add some sesame oil, sesame seeds and some green onions..

So these days, I make Janjgorim in big batches in my Instant Pot (here's my stovetop version) and store it in my kimchi fridge for longer storage. In addition to the fact that you can store this for days and that it's yummy just straight out of the fridge, it's a side dish that just keeps on giving.. haha.. you can do much more with it than just having it as banchan.

Korean Street Toast (Gilgeori Toast 길거리 토스트) https://kimchimari.com/korean-street-toast/ https://kimchimari.com/korean-street-toast/#comments Tue, 07 Apr 2020 05:18:52 +0000 https://kimchimari.com/?p=15580 Korean Street Toast SandwichKorean Street Toast is a grilled egg omelette sandwich filled with crunchy veggies and cheese.  It's a wonderful medley of flavors - buttery, savory, crunchy and even is a bit salty and sweet. It also has great chewy and crunchy texture in addition to the gooey melted cheese so it's bound to satisfy all your cravings!

[caption id="attachment_15586" align="aligncenter" width="1000"]korean street toast stacked on plate with green pattern Korean street toast sandwich[/caption]

This Korean Street Toast was most popular when I was in college, it was a filling toast that you could get from street carts on your way to work or school. I didn't get to have it too many times though because, for some reason, this was not a food that many girls ate on the street. Usually, only men ate these. I guess the sandwich was too hearty for dainty girls.. lol..

Also, it didn't help that I was a very shy girl (I'm still shy and is the reason why I don't like to show my face on pictures or videos) back then and I just couldn't get myself to go near the street cart to buy the sandwich. And even if I had the courage to buy it, how would I eat it on the street?

I probably missed a lot of yummy street food because of my shyness.. haha..

In Korean, this is called Gilgeori Toast (길거리 토스트), this filling and flavorful breakfast sandwich has mostly disappeared for the last 20 some years and have now become popular again. But of course, with a modern twist - like adding mozzarella cheese (which was very scarce when I was in college). Now, Koreans love to add mozzarella cheese to just about everything from tteokbokki to hotteok.

Anyway, this came to mind because I was trying to think of something that would go well with Dalgona Coffee which has been the latest craze in this tough time of isolation with so many being confined in their homes. I look forward to the day when all this will be in the past and just a memory.

Korean Egg Roll (Gyeran Mari 계란말이) – 3 ways https://kimchimari.com/korean-egg-roll-gyeran-mari/ https://kimchimari.com/korean-egg-roll-gyeran-mari/#comments Thu, 16 Jan 2020 07:08:08 +0000 https://kimchimari.com/?p=15326 close up of Korean Egg Roll sliced and platedKorean Egg Roll (Gyeran Mari) is a very easy and simple side dish that is a favorite in lunchboxes. It is wonderfully soft, fluffy, savory and mild, tasting very similar to an omelet but a little firmer and chewier. And the addition of green onions makes it a perfect banchan in a Korean meal. All in less than 20 minutes!

[caption id="attachment_15338" align="aligncenter" width="800"]korean egg roll with carrots, ham and green onion cut into slices and plated on green dish Korean Egg Roll (Gyeran Mari) slices[/caption]

Korean Egg Roll is probably one banchan that a beginner Korean home cook will most likely learn to make first before anything else.. well, maybe other than cooking instant ramen 😝. And I'm so sorry that I'm so late in bringing this to you.

At the beginning of my blogging years, I didn't post it because I thought that it's so simple to make and doubted whether it even needed a recipe?? But now, I know better. What's simple to me may not be so simple to someone who has never seen it made before.

Btw, this Korean egg roll is a great last-minute side dish to make for any Korean meal because it goes with any dish (especially well with strongly seasoned dish like spicy kimchi jjigae and fish jorim) and can be made easily with very few ingredients.

It is most often served at room temperature as a side dish to meals and is especially popular in Dosirak (lunchboxes) but can be great as snacks and also as anju (food that goes well with alcoholic drinks). Cheese Egg Roll is especially popular among young people, at indoor Pojangmachas 포장마차 (small street vendors) these days.

Best Korean Potato Salad (Gamja Salad) https://kimchimari.com/korean-potato-salad/ https://kimchimari.com/korean-potato-salad/#comments Thu, 23 May 2019 05:33:44 +0000 https://kimchimari.com/?p=14038 Korean potato salad served as a scoop on red bowl with grated egg yolk on topKorean Potato Salad (Gamja Salad) is somewhat similar to the classic American potato salad but different because of the extra crunch and freshness added with apples and cucumbers. One of the most commonly served side dishes at Korean BBQ restaurants, it is the perfect accompaniment to rich grilled meats like Galbi and Bulgogi.

[caption id="attachment_14046" align="aligncenter" width="800"]korean potato salad on black dish on wooden table Korean potato salad (gamja salad) side dish[/caption]

Korean Potato Salad or Gamja Salad (감자 샐러드 or 사라다) is, yes, not a classic traditional Korean dish but as long as I can remember it was part of Korean cuisine. Perhaps it was introduced to Koreans via the US Army base after they settled in Korea after the war... but it's just something that Koreans love to have - as a side dish but also in a sandwich (although it's done a little bit differently for that) as Gamja Salad Sandwich.

When I think of this dish, my memories take me back to my college days. At Ewha Womans University where I attended college, we had a huge cafeteria and their menu changed daily and I was not a huge fan of their food (as it usually goes with any college cafeteria.. haha) but if there was one thing that took me and my friends back to the cafeteria almost every day was their Gamja Salad!!!

Can you believe it?? 😂🤣My friends and I used to say..

"Hmm..just not sure what they put in the salad but it's like I am addicted to it!!"

Omurice (Omelette Rice) 오무라이스 Recipe https://kimchimari.com/omurice-omelette-rice-recipe-korean/ https://kimchimari.com/omurice-omelette-rice-recipe-korean/#comments Sat, 01 Jul 2017 18:29:44 +0000 https://kimchimari.com/?p=9477 Omurice Omelette Rice Recipe Closeup

Omurice is short for Omelette Rice which is fried rice wrapped in egg instead of other stuffings like ham and cheese.

[caption id="attachment_9496" align="aligncenter" width="1200"]Omurice Omelette Rice Recipe Closeup Omurice Omelette Rice Recipe Closeup[/caption]

Omurice comes from two words, omelette + rice. The dish originally comes from Japanese cuisine but it has become so popular in Korea over time that now it has become a part of Korean cuisine. In particular, it is usually a part of a Korean food category called Bunsik.

Now, let me talk a little about Bunsik. What does Bunsik mean? Bunsik 粉食 분식 literally means "food made from flour" but in reality, it has become to mean a certain group of Korean dishes that are inexpensive, attractive to younger crowds and is also great as snacks. Tteokbokki, Udon, Oden soup, Kimbap, Twigim, Mandu and other noodle dishes like ramen are some very classic menu items at a Bunsik restaurant.

So since when and how was Bunsik ever came to exist?
